I know it’s a bit outdated to say I like train journeys, but they are indeed fun in winter. Yes, there is laughter, conversation, gossip and overall merriment. It all starts with great gusto and then as the crescendo begins to take a dip, it’s a sign that hunger pangs have started craving in.


Mooli Paratha


Mooli Paratha are best made in winters and they taste yum too as vegetables this time round are fresh. But any other time of the year, mooli parathas are great too. A simple spiced up stuffing into whole wheat rotis served with chunda/pickle or rolled as one with these condiments is what everyone would say ‘Waah! Maza aa gaya!’. Stuff Paratha

Well, it's not possible for anyone to make so much food for a family of 20 travelling by train. So, here’s another family favourite paratha that is just perfect for the winters. This one is quite interesting in that how would you like an omelette inside a paratha? Yes, this super yummy Stuff Paratha has an omelet on the inside. A bit of a task and skill both. As the parathas have to be rolled first and then a slight incision into the paratha and you pour the beaten egg mixture. Rajma Rice

While it is not possible to carry dabbas of Rajma Rice, but I tell you I have seen a passenger carry even steel plates and seen them serve raita, pickle and then main course. Never mind, to each his own. Actually she! It was a lady who served food even to a traveller she got friendly with. What you can do is surely mix rajma with plain rice/jeera rice. Just ensure the rajma gravy isn’t too thin or adjust the rice proportion accordingly. For that yummy rajma rice, this recipe is perfect.



Gobi Paratha


My favourite, the Gobi Paratha is just what I would root for given an option. Made from cauliflower florets without any ginger or garlic, the paratha has all the trappings of a food to make you a lifetime addict. Think skipping making a sabzi, its gobi paratha, think tiffin, again gobi paratha. That’s the amazing part of this paratha.
