First recipe on the list is the traditional Bengali festive sweet - Bhapa Doi which literally means steamed yogurt. Bhapa Doi is made by steaming the mixture of milk, condensed milk and yogurt, topped with almonds, pistachios and raisins. It takes around 2 hours for this sweet treat to cool down in the refrigerator, but once set you can cut it into smaller pieces and serve. If you fancy you can also try making caramel bhapa doi and mango bhapa doi.
Payesh -
Next comes the creamy Payesh or Nolen Gurer Paayesh made using just a handful of ingredients. This classic bengali dessert - payesh - gets ready within half an hour. All you need to do is cook some rice in boiling milk and then add roasted cashew nuts, raisins, coconut slices, and palm jaggery or nolen gur. Transfer into serving bowls and serve. If you have some Orange drink powder easily available then you can also give Payesh a wonderful twist and make some Orange Chennar Payesh.
Third recipe is also a Bengali delight that is a byproduct of milk - Mishti Doi! Made literally using just three ingredients like milk, jaggery and yogurt, this popular sweet treat needs a little overnight magic but the final result is beyond amazing. The simplicity of Mishti Doi impresses anyone at the table making it the best option for a busy day. If you have some more time on hand then you can also indulge in Baked Mishti Doi or mishti doi panna cotta, but remember to serve it chilled.
Lastly on the list is the best transformation of milk- Sandesh that melts in mouth! These little bites of happiness or ‘shondesh’ is a popular Bengali mithai found in every halwai shop.
