Top 5 Vegetarian Sabzis for Mid-week meals.



Every evening as I finish work, my brain suddenly starts to ponder on ideas for dinner just like everyone else. We are a bunch of foodies at home, and so every meal has to be something special yet simple to make. Home-cooked meals are a priority for us, and I really enjoy making roti, sabzi, daal and chawal on a daily basis. So I thought, why not curate a menu for Monday to Friday?


Here are some quick and easy Vegetarian sabzi ideas for mid-week dinners-


Aloo Gobi:

This has to be an all time favourite recipe in pretty much all the households alike. I mean Aloo makes it all better, plus, it takes minimum effort to prepare this recipe. However, do you remember that classic Aloo Gobhi served at weddings? Yummy! You can try and replicate that at home. Prepared mainly with potatoes, cauliflower and lots of seasoning, this sabzi can be eaten along with a nice Roti.




Chana Aloo Curry

Some days when you don't get a chance to go out and get some veggies, you can plan to make Chana Aloo Curry. This rustic recipe is made with potatoes and kabuli chana cooked well with spices. You can relish this either with a roti or garma garam puris. If you really crave for a twist to this, then you can try out Tarri Chana.



Palak Paneer


Our good old friend Palak Paneer, never fails to impress us, isn't it? Of course it is tasty, healthy, and easy to make. This typical Punjabi preparation is made with paneer cooked in mildly-spiced spinach gravy. Palak and paneer marry well in this dish and everyone loves it. You can also convert this loved recipe into a parantha. And for all those who are vegan, you can try out the vegan palak paneer.








Korma

Korma is a very popular recipe which is made using a range of spices, cashew nut powder, fresh cream, and vegetables or meat. To make Mixed Vegetable Korma, you can use veggies of your choice and if you are a non-veg lover then you can try out an Afghani speciality the mutton Korma where the Mutton on the bone is cooked with simple masalas and prunes. Both taste delicious and make up for a great meal.








Chole Bhature

Last but not the least is Chole. Pair it with Bhature and a complete North Indian meal is ready at home. If you do not want fried Bhature, then you can make Baked Bhature. Soak some Chickpeas (chole / kabuli chane) for 7-8 hours and cook as per the recipe for perfect Punjabi style Chole bhature.
