The Outsourced Home Kitchen


A very famous sit-down and take-away eatery in my locality is known for three fabulous cuisines! Guess which ones? For his completely Jain and authentic Punjabi & Mexican preparations. Unbelievable, right? Looks like there is nothing common in his preparations. But he confidently claims there is, atleast between Punjabi and Mexican cuisines. Kidney Beans, he says! Also, he has two different stations for his Jain preparations too! Indeed a devout person he is!


So, when we want to take a day off from cooking, here’s what we order from this ‘outsourced’ home kitchen.


Healthy Grilled Sandwich

The vendor surprises once again! This time with the use of white butter instead of salted butter! He makes the standard sandwich and a yummy spicy filling. With this recipe here I have a double-decker Healthy Grilled Sandwich where paneer and vegetables trump the use of white slices. To make it healthier, you can use multi-grain bread or whole wheat bread. This two-layered grilled sandwich first has a layer of white butter, chutney and cucumber slices. Then, apply white butter on the second layer and put a mixture of grated paneer-capsicum-chilli flakes-sandwich masala. Place the tomato slices, sprinkle the masala again. Finally, finish with a buttered slice of bread and grill.




Rajma recipe

Often we pick up Rajma from him too. Just love the tender rajma cooked in lovely, flavourful gravy. Yum! The joy of savouring a bite of garma garam phulka with Rajma! If at all we have Rajma then it is on a Sunday or any holiday, when we all can dine together, over conversations and laughter. He will never share his recipe of Rajma, but I have this recipe which I am going to try.









Punjabi Chole Bhature


A snack or a meal, the Punjabi Chole Bhature meets both criteria and is very popular. The chole-bhature is a favourite at home too. When figuring out what makes the Punjabi Chole Bhature so awesome, it is dry roasting the pomegranate and cumin seeds and cooking the chickpeas with tea bags so that the chole gets a nice dark colour. The next challenging item is the Bhatura, because they need to fluff up and become a nice soft bhatura. I have tried the Punjabi Chole Bhature with this recipe here, and the results are always amazing!





Authentic Mexican Rice

Simple, quick and yummy! This authentic Mexican Rice is the first of the things I taught my teen kids. Also, it is great and ready in less than an hour. Take boiled rice. First, saute onions, garlic, corn, mixed herbs, bell peppers and kidney beans. For an additional flavouring, add coarsely shredded Basil leaves and then add rice. Mix well and serve hot.
