Gone are the days when chaat was a treat or a break from your usual chaatwala bhaiya who would come to your locality. Also, it would be easier to recognise that the bhaiyaa is here on the basis of the eager crowds surrounding him. Not to mention the ‘Bhaiyaa ek sukhi puri’ irrespective of the chaat you had.
With pani puri kits now available, makes me wonder if paani puri has become ready-to-eat ? Feels like it has.
I too may bid adieu to my chaatwaalaa bhaiya, but that’s because I love cooking from scratch.
So what comes to mind when one hears chaat ? Different people, different answers. Here’s a list of some of the popular chaat dishes.
Golgappe
Golgappe in Delhi, puchka in West Bengal and paani puri in amchi Mumbai. The weakness of a million women, the most irresistible item on the list of chaats and probably the most-consumed chaat item at any thelaa or mishthan/halwai shop. Not just a snack, but a treat, a party, a wedding menu item. No matter what the occasion, but who needs an occassion? Golgappe are always the crowd-puller.
Kachori
Kachoris are the puffed up maida puris with a spicy filling. Known by different names in different states, the Kachori, kachauri or kachodi is as popular in all its local avatars too. The crunchy, spicy, fried Kachori is also made in a sweet version in Jodhpur, Rajasthan.
Dahi Vada
This is actually ‘sahi vada’... Vade ka mazaa chilled dahi ke saath. After all that spicy, tangy indulgence, a chilled dahi vada will be soothing to your gut and satisfying to the soul. Those soft dumplings and that thick creamy curd, sometimes I feel guilty that I gobble them down that are so painstakingly made.
Bhelpuri
Bhelpuri, synonymous with ‘beach’ side snack. This puffed rice and veggie mix with chutneys, finely chopped raw mango, crumbled puris, a garnish of sev, coriander and that papdi is such an amazing snack …. Eat bhelpuri once and I bet, you will become a fan …. Be it a kiddy party, or a picnic plan and the bhel has to be on the menu. Such is the popularity of the snack that no one escapes its magic. Sometimes it's just you and your plate of bhelpuri .. Sheer bliss !!
