Something’s Fishy, But It’s Delicious - Part II


In continuation with the series, where my friends have tasted some really unique fish preparations, a mention must be made of these recipes too. These fish preparations are indeed among some of the unique fish preparations, two of them being our very own Indian preparations!

Salmon Curry

A masterpiece literally, this Salmon Curry is a piece of culinary creation. This recipe brings together wonderful flavours. There are the tangy, sweet-tangy, sharp and spicy flavours. Whew! Quite a lot of them isn’t it? Here, flattened and marinated salmon pieces are stuffed with a shrimp-carom mixture that is wrapped in aluminium foil and are then poached in boiling water. After removing the foil, they are then simmered in a puree of black grapes, flavoured with Ratanjot (a spice) and fresh cream stirred in it. Gold foil on it and it is ready to serve. Totally classic!



Mustard-Roasted Fish

A Bengali fish preparation and one of the few ones that use steaming as a process to cook the fish, the other being the Parsi cuisine that has the Patra ni Machchi. So the Mustard-Roasted Fish uses Basa fillets that are marinated in a mustard and coconut paste. This is the second marination, the first being a marination of salt and lemon juice. The marinated fish fillet are then wrapped in a parcel of banana leaves and steamed like idlis.




Fish Rice

Going by the name, this Fish Rice here is a Chinese preparation that has rice, fried fish cooked in an Oriental sauce and vegetables tossed till they are glazed. While serving, rice is served with the fish cooked in a sauce and the sauteed vegetables. The Chinese way of cooking is super easy and quick, isn’t it? Yes, one has to be careful and swift when stir-frying.




Jamshedji Fish

Were the Parsis inspired by the Bengalis that we have the Jamshedji Fish? Regardless, this is a unique fish preparation that is cooked in a mustard gravy. Pomfret pieces are first marinated in a salt-lemon marination. After shallow frying them, they are then simmered in a mustard-poppy paste along with other ingredients. As it simmers, add a little vinegar and garnish with coriander.
