Now, I really don’t want to remind anyone of the pandemic phase. I know how bad it was for all of us. But reminiscing on the time two years ago, I did enjoy some bits of that phase. The no-rush phase I mean.
Even with office work, it was a good feeling that I don’t have to rush for crowded trains, the dreadful traffic etc. I used that conserved energy to try out some recipes. Here’s what I made during the down time.
Brownie
As a chocolate lover, I always try something with chocolate in it. I have done a couple of chocolate recipes from chocolate cakes, chocolate muffins, mousses, bon bons, and cookies. This time I tried Brownie Shake. They are not cakes, they are not pastries, they are BROWNIES. From what I read about it, a brownie is a cross between a cookie and a cake. Also, there are three types of this amazing baked stuff. There is cakey, chewy and fudgy. I like mine fudgy, i.e moist, dense, and gooey.
And the magic that it creates when it meets vanilla ice cream is just heavenly. Adding to the fun is the chocolate sauce, dark chocolate, whipped cream and chocolate sticks. Whoa! So much chocolate! Am loving it!
Grilled Chicken
The way I like my food, street food actually, is rolled and spicy. Like this Grilled Chicken kathi roll. The first thing I look for when I am craving street food is, rolls and wraps. At very few selective roll outlets, does one get such authentic fare. This is a healthy version, as instead of a refined-flour base, a wheat roti is used here. That garam masala stuffing and the other best part of the roll, the chatpata salad. The crunch of the spicy salad and that green chutney is just too awesome. How I love it!
Egg Salad
This is something unlike what I have come across before. The Chinese have taken their love for tea to the next level. This Chinese-style Egg Salad recipe is, can you believe it, boiled in a tea and spice decoction. And surprise surprise, this Chinese-style salad has a mayo-chilli sauce dressing. Wow! It's fun really. Quite a unique way of rustling up a salad.
Chicken Curry
One of the most celebrated chicken curry recipes, the Puran Singh Chicken Curry is what a famous celebrity chef made when he was inspired by a dhaba-style chicken preparation way up in the North. A spicy, chicken curry that goes best with steamed rice, paratha or plain rotis.
