Modern Twists on Classic Indian Dishes

Indian cuisine is a treasure trove of flavors, spices, and textures. Growing up, I was always fascinated by the rich and diverse culinary traditions of India. The vibrant colors, aromatic spices, and the sheer variety of dishes never ceased to amaze me. But as much as I love traditional Indian food, I also enjoy experimenting in the kitchen and giving classic recipes a modern twist. This fusion of old and new creates exciting and innovative dishes that bring a fresh perspective to beloved classics. Here, we explore four such innovative dishes: 

Methi Thepla is a traditional Gujarati flatbread made with fenugreek leaves, whole wheat flour, and a blend of spices. To give this dish a modern twist, we transform it into a quesadilla. Prepare a thepla like usual, then layer it with a filling made of grated cheese, black beans, corn kernels, and chopped bell peppers, then place one more thepla on top of it. Once again, cook it until the cheese melts and the thepla is crispy. Serve with avocado chutney or a tangy yogurt dip for a contemporary touch.


Pav Bhaji is a popular street food from Mumbai, consisting of a spicy vegetable mash served with buttered bread rolls. To transform this dish into a fun and interactive meal, try making Pav Bhaji Fondue. Prepare the bhaji as usual, but blend it until smooth and serve it in a fondue pot. Provide an assortment of dippables such as bread cubes, roasted vegetables, and even cheese sticks. This fusion dish is perfect for parties and gatherings, offering a unique way to enjoy a classic favorite.


Aloo Gobi is a beloved North Indian dish made with potatoes and cauliflower, cooked with a blend of spices. To give this dish a modern twist, we transform it into Aloo Gobi Tahiri, a flavorful rice dish. Simply fold in the classic Aloo Gobi into cooked and flavoured basmati rice. Garnish with fresh coriander and a squeeze of lemon juice for an extra burst of flavor. This dish is a perfect blend of textures and spices, making it a delightful fusion meal.


Vindaloo is a spicy and tangy dish from Goa, traditionally made with marinated meat and a blend of spices. To create a fusion version, we transform it into Chicken Vindaloo Tacos. Marinate chicken pieces in the vindaloo spice mix and cook until tender. Warm up some tortillas and fill them with the spicy chicken. Top with fresh coriander, a squeeze of lime juice, and a dollop of yogurt or sour cream to balance the heat. These tacos are a delicious fusion of Indian and Mexican cuisines, perfect for a unique and tasty meal.
