Lazy Weekday Meals to Try Before the Year Ends

As the year draws to a close, the hustle and bustle of the holiday season can leave us craving simple, comforting meals that don't require hours in the kitchen. A lazy weekday meal can be just the thing to unwind and enjoy some delicious food without the stress right before the year ends. Here are some classic Indian dishes that are perfect for a laid-back weeknight:

First one is Amla Murabba, a sweet and tangy preserve made from Indian gooseberries (amla). This delight is not only delicious but also packed with health benefits, thanks to the high vitamin C content of amla. This glossy, sweet preserve can be enjoyed on its own or as a side with simple parathas and rotis - perfect for weeknights.

Kadhi Chawal -

Kadhi Chawal is a comforting, flavorful and tummy-filling combo that brings together the creamy yogurt-based curry (kadhi) with steamed rice (chawal). The kadhi is made from yogurt and gram flour (besan), seasoned with spices and tempered with mustard seeds, cumin, and curry leaves. This super quick and easy cooking process makes Kadhi Chawal a wholesome and satisfying meal that is perfect for a lazy evening.

Then comes the classic dish made with potatoes (aloo) and cauliflower (gobhi) cooked with a blend of spices -Aloo Gobhi. This dry curry is known for its rich, earthy flavors and is a staple in many Indian households. It gets ready in no time and is loved by kids and adults alike. Aloo Gobhi is typically served with roti or paratha, making it a hearty and delicious side dish.

Yet another simple but flavourful dish that you can make over the weekdays is smoky Baingan Bharta. This dish is made with roasted eggplants (baingan) mashed and cooked with onions, tomatoes, garlic, and spices, creating a dish that is both hearty and aromatic. Baingan Bharta

is typically served with roti or naan, and its robust flavors make it a standout side dish that can elevate any meal.

Finally with fresh fenugreek leaves (methi) in season, make some nutritious and flavorful Indian flatbread - Methi Paratha. For that, the dough is kneaded with chopped methi leaves, spices, and a bit of oil, then rolled out into flatbreads and cooked on a hot griddle. Methi Parathas are soft, slightly crispy, and packed with the earthy flavor of fenugreek. They are perfect for pairing with curries, yogurt, or pickles, and make for a satisfying and wholesome meal.

In conclusion, a lazy weekday meal before the year ends can be both comforting and delicious with these classic Indian dishes. So, take a break from the holiday rush, gather your loved ones, and enjoy a relaxing meal that celebrates the rich culinary heritage of India.
