A classic recipe from the state of Maharashtra, made with a minimum number of ingredients which are easily available in your pantry. To start off, saute onions, peanuts, boiled potatoes and mild spices and add in the washed pressed rice. You can also add in veggies like peas, or carrots etc. to make it more healthy. Then, drizzle some lemon juice on top and serve hot garnished with some coriander and crispy sev. It is an absolutely fuss free, easy to make, light on stomach breakfast recipe.
Besan Ka Chilla
Next on the list is a super-duper easy recipe that can be made anytime and is perfect for your kid's lunch boxes - besan ka chilla. Literally made with only a handful of items like gram flour, and some spices whisked together into a smooth dosa like batter. Besan is a great source of protein, but if you want, you can add in a stuffing of sprouts and paneer to add to the nutritive value of cheela.
Paranthas
Paranthas are yet another staple! You can make a variety of paranthas each day. For this basic parantha knead the flour with leftover dal, onion, green chillies and coriander leaves. To add to the value, you can try making Paneer Stuffed Nachni Parantha as ragi is a powerhouse of proteins and perfect for a healthy start.
Poori Aloo
Make this for a Sunday brunch or breakfast. Poori aloo is made by making a dough using potatoes, salt, carom seeds, whole wheat flour and refined flour then rolled into puris and deep-fried till golden brown and crisp. Eat as it is or serve hot with a subzi of your choice. Kids love this one.
Litti Choka
Last on the list is a signature dish of Bihar - Litti Choka. Litti is a little roasted dumpling made with sattu and some other spice agents. These little littis are paired with choka which is made by mashing together roasted brinjal, potatoes, tomatoes along with chopped onions, garlic and green chillies. Key is to pour hot ghee over the litti and serve hot with chokha.
