As is with most things in life, eventually some monotoneity sets in and food is no exception to this.
Fortunately for food, it is somewhat easier to bring down the weariness of the routine. As a solution to breathing freshness with daily cooking, it is said ‘eat the rainbow’. This phrase means to eat foods that have a variety of colours as this is not only appetising, but also nourishing. Keeping these benefits and the boredom of having to eat the same dishes in mind, we have selected a few recipes in the main course category that are easy and interesting to make.
As for desserts, we have stuck to the original versions. Surely they do impress too!!
Chana Dal Pulao
Chana Dal Pulao is your answer to make a variation of a (spicy, gravy-based) pulao. Looking for something different? Want to have more of rice and a little bit of dal. Here’s a combo of dal and rice. This chana dal pulao is a mildly-spiced pulao that has the goodness of rice and dal, pressure cooked in ghee and other whole spices.
You may even want to skip rotis and sabzi. Just a boondi raita/lauki raita to go with it. You are sorted with this.
Baked Fish
When you say fusion food, it is a saviour and a blessing to food lovers, light eaters and those with a hectic lifestyle. Firstly, one gets to sample new recipes. Secondly, one can combine ingredients of a completely different cuisine to make an awesome dish and the best part, it is an interesting play of tastes, colours, textures and of course, cooking techniques… like this Baked Fish which has Rawas or Indian Salmon with veggies. A light sprinkling of spices and a drizzle of oil. Simple and refreshing, good for a quick, light dinner.
Baked Desi Pasta
Close on the heels of Baked Fish comes, Baked Desi Pasta, a fun Indo-Italian fusion recipe. By the look of it, no one can tell that it has a soya granules mixture. A stunning lasagna layered with a spicy soya granule mixture, tomato sauce and cheese. Topped off with mozzarella and baked till cheese melts and turns golden brown.
An interesting variation would be to add boiled chick peas in the soya granules mixture and eccolo ! (there it is in Italian), our Baked Chana Pasta is ready.
Dhaba Style Paneer Masala
Dhaba (hyperlocal/roadside food joint) food is also known to be lip-smacking and there’s an unexplainable thrill of eating at such a food joint. Ok, the striking feature of the Dhaba Style Paneer Masala is that it has paneer and is made dhaba -style. Appears fiery, but don’t go by the colour, it comes from the Kashmiri chillies. Just a little bit of marination with basic spices and simmering the marinated and friend paneer in a flavourful gravy brings out the magic. If you have an (Indian) sigree or a barbecue, you can add that smoky flavour to this paneer preparation. It sure will taste fabulous !
The sabji is a perfect accompaniment to naan, rotis and chapatis.
Keema Naan alias Baida Roti
Baida Roti pockets come close to Keema Naan. The pockets are an Indianised version of rolls/wraps, where even the cover or wrap is an Indian flatbread. See, the keema naan has a roti (a whole wheat one), an omelette on the outside and a roti on the inside with a flavourful, meat stuffing. An easy-to-make snack or a quick meal, especially when there is minced meat in the fridge or you can cook some minced meat in a jiffy. Ho gaya na ?? Full meal hi samjho !

Sitaphal Basundi
After the main course, comes yet another interesting and the most-awaited course, the dessert .. Presenting Sitaphal Basundi, an amazing preparation of quite a versatile fruit. The inherent sweetness and creaminess of the custard apple when combined with dry fruits and elaichi transforms the fruit into a divine dessert. Adding to the royalty is the subtle presence of saffron.
