Frying Indeed Makes Foods Delicious



Most of you agree that frying does make foods a lot more delicious! No wonder we, kids and adults too, love even potato fries with a sprinkling of salt and red chilli powder, right? When I observed this, the inquisitive me did look up online to find out what is it about frying that makes foods delicious. The chemical process during frying, viz, drying up of the crust of the food makes it crunchy outside and tender outside. So, it turns out that the crunchy sound and the sensation following that a bite of oily food sends one into a culinary pleasure zone.


Now I know why we all love fried foods.


Here are some recipes that are among my most favourite when it comes to dishes that have at least one element fried.


Aloo Gobhi

Reminds me of the days when my school friend would get Aloo Gobhi in her tiffin, and it would piping hot as she stayed closeby. Interestingly, she was the one who told me about another version made with these vegetables. She said there is also a Vyah (meaning a wedding in Punjabi) and so, Vyah de Aloo Gobhi, translating into a Wedding Wale Aloo Gobhi. This dry preparation is simply delicious because of the use of spices and only lightly shallow frying which I already said above makes any preparation tastier.




Malai Kofta

Yet again a sabzi that has a fried element, namely the koftas. Then the curry on it and this makes it a delicious preparation. What a fabulous recipe of biting into paneer dumplings stuffed with cashews and raisins, thereby enhancing the taste and richness. When making the gravy, do drain it after blending into a puree. I will tell you another best part and that is, the recipe is ready in 30 minutes.



Gatte ki Sabzi

An iconic Rajasthani sabzi, the Gatte ki Sabzi with dumplings that one ought to make from scratch. This means you roll out flavourful besan flour dumplings and cook it in a yogurt-based gravy that is tempered with ghee. But before that, do fry the gattas in ghee/oil. See, tempering in ghee or clarified better does make the dishes yummy. I have experienced this with Dal Fry.

The end result is definitely going to be mind-blowing.
