Let’s start with our millet recipes.
Ragi Dosa and Idli
With ragi flour as a common ingredient, just take idli rawa to make soft idlis. Convenient way to prepare both dishes simultaneously is to start with the Ragi Idlis first. So you take ground split skinless black gram, mix it with the gram paste, ragi flour and ferment it for a good 8 hours. Add the green chilli tempering and the leavening agents. Now grease the idli moulds, pour the batter and let it steam. While the Ragi Idlis are steaming, take the Ragi Dosa batter that is readied after 4 hours of fermenting after mixing together the flours with the yogurt and water. Flavour the batter by grinding it with red chillies, coriander and fenugreek seeds. Pour the Ragi dosa batter on the tawa and cook till evenly done.
Green coconut chutney goes without saying, right?
Ragi Rava Upma

Now make the tempering by sauteing onions, and coriander in ghee and then add the cooked mixture. When serving, drizzle a spoonful of ghee.

In a bowl take the roasted, crushed walnuts, then add ragi flour and cardamom powder. Pour the jaggery syrup and once the mixture cools start by greasing your palms to make laddoos.
