A Mixed Dawat


When having guests over for a meal, some basic things are a must. About four to five dishes, out of which one has to be a rice preparation, sabzi and curry among others. Another important thing is to give my guests a lovely food memory. So, like I did with my menu. The range of the menu from an elaborate dish to a simple preparation was well received.


So, here’s my menu for our Saturday meal.


Kashmiri Pulao

By the look of it, the Kashmiri Pulao is quite plain. No vegetables in ground masalas and no raw vegetable or herb garnish. This very authentic rice preparation from Kashmir is rich and quite simple to prepare. I would urge those trying their hand at cooking a special rice preparation, should start with this pulao for sure. Loaded with nuts, whole spices, and then finished off with a garnish of saffron and fried onions, the pulao took everyone by surprise.




Veg Makhani

No meal is complete without a sabzi preparation. An elaborate preparation, the Vegetable Makhani is a delicious sabzi that has among Indian vegetables broccoli and mushrooms too. A little sweet and a little spicy, the makhani is rich because of its butter and cream. Perfect for parathas or butter rotis.







Kaju Curry

Well, this is a must. If all other dishes are typical restaurant-style, then one has to be a regional one. So this, very simple and lightly flavourful Kaju Curry made Goan-style featured on the menu. With potatoes in it, it sure looks filling. Tastes great with steamed rice.





Cheese Paratha

With so many exciting items on the menu, how is it possible not to have a roti/naan? A plain flatbread is ideal but then I had the post-lunch time on my mind, in case the kids insist on snacking. So, Garlic Cheese Parantha was the best bet. Basically, I used fried garlic and, the star ingredient of the dish, CHEESE and that too 3 varieties of it that go into the paratha. Ooh! Gooey and yummy.
